- 4 salmon fillets (6 oz each)
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- Zest of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place salmon fillets skin-side down on the baking sheet and season generously with salt and pepper.
- In a bowl, mix panko breadcrumbs, Parmesan cheese, parsley, dill, lemon zest, and olive oil until well combined.
- Evenly spread the breadcrumb mixture over each salmon fillet.
- Bake for 12-15 minutes until the salmon flakes easily with a fork and the crust is golden brown.
- Remove from oven and let sit for one minute before serving.
