- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium sweet onion, finely chopped
- 1 (14.5 oz) can diced tomatoes
- 2 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp dried oregano
- 2 bell peppers, sliced thinly
- 1 tbsp brown sugar
- 3 tbsp low-sodium soy sauce
- 2 tbsp fresh lemon juice
Instructions
- Prep all ingredients by chopping vegetables and mincing garlic.
- Layer the chicken breasts in the crockpot and top with garlic, onions, bell peppers, and diced tomatoes.
- Pour chicken broth over the layered ingredients until just submerged.
- Sprinkle spices, brown sugar, soy sauce, and lemon juice on top; gently stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken directly in the pot and stir to mix.
