Ingredients
- 3–4 boneless skinless chicken breasts (1.5 – 2 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 2 tbsp taco seasoning
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- ½ cup sour cream or Greek yogurt (for serving)
- 8 tortillas (flour or corn)
Instructions
- Dice the onion and mince the garlic. Set aside.
- Place the chicken breasts in the crockpot.
- Sprinkle taco seasoning over the chicken.
- Pour in chicken broth until it covers half of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
- Shred the chicken in the crockpot using two forks and mix well before serving.
