- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 1/4 cup fresh lime juice
- 2 tsp ground cumin
- 1–2 chipotle peppers in adobo sauce (adjust to taste)
- 2 tbsp taco seasoning
- 1 cup chicken broth
- 8 tortillas (flour or corn)
- Optional toppings: cilantro, avocado, cheese
Instructions
- Place the chicken breasts in the crockpot.
- Pour fresh lime juice over the chicken and sprinkle with ground cumin.
- Add chipotle peppers, taco seasoning, and chicken broth; stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- Shred the chicken in the pot using two forks and mix well with the juices.
- Warm tortillas and fill them with shredded chicken. Top with cilantro, avocado, or cheese as desired.
