- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 thick slices of bread
- 2 tbsp butter
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and garlic powder.
- Heat oil in a skillet over medium heat and sear chicken for 5-7 minutes per side until golden brown and cooked through (165°F internal temperature).
- In a bowl, mix shredded cheeses with ranch dressing until well coated.
- Spread butter on one side of each bread slice. In a hot skillet, place one slice butter-side down, add cooked chicken, top with the ranch mixture, then cover with another slice of bread.
- Grill sandwiches for 3-4 minutes on each side until golden brown and cheesy filling oozes out.
