Instructions
- Preheat oven to 425°F (220°C).
- Wash and cut the potatoes into bite-sized chunks.
- In a large bowl, toss the potato chunks with olive oil, salt, pepper, and herbs until evenly coated.
- Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.
- Roast for 30-35 minutes, tossing halfway through until golden brown and crispy.
- Serve warm, garnished with additional herbs if desired.
