- 1 lb fresh white fish fillets (cod or tilapia)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 tsp salt
- 1 tsp pepper
- Zest of 1 lemon
- Oil for frying (canola or vegetable)
Instructions
- Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with lemon zest.
- Dip each fish fillet into the flour mixture, then into the egg wash, and finally coat thoroughly with panko breadcrumbs.
- Heat about half an inch of oil in a large skillet over medium heat until shimmering.
- Fry the fillets in batches for 3-4 minutes on each side until golden brown and crispy.
- Drain excess oil on paper towels and serve hot with lemon juice and your favorite dipping sauce.
