- 1 lb lean ground beef
- 1 cup shredded sharp cheddar cheese
- 4 large flour tortillas
- 1 medium onion, finely diced
- 2 tsp cumin
- 2 tsp chili powder
- Cooking oil for frying (or cooking spray for baking)
Instructions
- Preheat the oven to 400°F (200°C) if baking. Spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground beef with the diced onion until fully cooked. Stir in cumin and chili powder.
- Place a tortilla on a flat surface, add some beef mixture and sprinkle cheese on top. Fold sides and roll tightly.
- For frying: Heat oil in a pan over medium-high heat and fry each chimichanga until golden brown, about 3 minutes per side. For baking: Place seam-side down in the prepared dish and bake for approximately 25 minutes or until crispy.
- Serve warm with sour cream and salsa.
