- 1 lb fresh salmon fillets
- 1 cup panko breadcrumbs
- 1/2 cup full-fat mayonnaise
- 2 tbsp sriracha sauce (adjust to taste)
- 1 tbsp lime juice (freshly squeezed)
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the salmon into bite-sized cubes.
- In a bowl, mix panko breadcrumbs with garlic powder, salt, and pepper.
- In another bowl, whisk together mayonnaise, sriracha sauce, and lime juice until smooth.
- Coat each salmon cube in the mayonnaise mixture then roll in the panko breadcrumbs until fully covered.
- Place on the baking sheet and bake for 12-15 minutes until golden brown and crispy.
