- 2 lbs Yukon Gold potatoes
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 cup finely chopped celery
- 1/2 cup finely diced red onion
- 1/2 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and cool before cubing.
- In a bowl, mix mayonnaise, Dijon mustard, pickle relish, salt, and pepper until smooth.
- Finely chop celery and red onion. Combine with any additional veggies in a large bowl.
- Add cooled potato cubes to the veggie mixture and pour in the dressing. Stir gently to coat without mashing the potatoes.
- Cover and refrigerate for at least 1 hour before serving.
