- 16 oz (2 packages) cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup brewed strong coffee (or espresso)
- 1 tsp pure vanilla extract
- 1 cup sour cream
- 1/4 cup unsalted butter, melted
- 1 1/2 cups graham cracker crumbs
- 3 large eggs (room temperature)
Instructions
- Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the pan to form a crust.
- In another bowl, beat cream cheese until smooth; gradually add sugar and mix until fluffy.
- Add brewed coffee and vanilla extract; mix until well combined.
- Beat in eggs one at a time until smooth.
- Fold in sour cream gently; pour filling over crust.
- Bake for 55-60 minutes or until set but slightly jiggly in the center.
- Turn off oven, crack door open, and let cool for an hour before refrigerating completely.
