  • 1/2 cup brewed strong coffee (or espresso)
  • 1 tsp pure vanilla extract
  • 1 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the pan to form a crust.
  3. In another bowl, beat cream cheese until smooth; gradually add sugar and mix until fluffy.
  4. Add brewed coffee and vanilla extract; mix until well combined.
  5. Beat in eggs one at a time until smooth.
  6. Fold in sour cream gently; pour filling over crust.
  7. Bake for 55-60 minutes or until set but slightly jiggly in the center.
  8. Turn off oven, crack door open, and let cool for an hour before refrigerating completely.
