- 1 lb lean ground beef
- 1 cup plain breadcrumbs
- 2 large eggs
- 1/2 cup ketchup
- 1 medium onion, chopped
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp Worcestershire sauce
- 1/2 cup diced bell peppers (green or red)
- 2 tbsp brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, sauté the chopped onions and bell peppers over medium heat for about 5 minutes until soft.
- In a large bowl, combine the ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, salt, pepper, garlic powder, and Worcestershire sauce. Mix until well incorporated.
- Shape the mixture into a loaf on a parchment-lined baking sheet or in a loaf pan.
- For the glaze, mix ketchup with brown sugar and spread it over the top of the meatloaf.
- Bake for approximately one hour until it reaches an internal temperature of 160°F (71°C). Allow to rest for 10 minutes before slicing.
