  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup ketchup
  • 1 medium onion, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1/2 cup diced bell peppers (green or red)
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onions and bell peppers over medium heat for about 5 minutes until soft.
  3. In a large bowl, combine the ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, salt, pepper, garlic powder, and Worcestershire sauce. Mix until well incorporated.
  4. Shape the mixture into a loaf on a parchment-lined baking sheet or in a loaf pan.
  5. For the glaze, mix ketchup with brown sugar and spread it over the top of the meatloaf.
  6. Bake for approximately one hour until it reaches an internal temperature of 160°F (71°C). Allow to rest for 10 minutes before slicing.
