- 1 cup fresh lump crab meat
- 8 egg roll wrappers
- ½ cup diced bell pepper
- ¼ cup thinly sliced green onions
- ¼ cup mayonnaise
- 1 tsp Worcestershire sauce
- 1 tsp Cajun seasoning
- Vegetable oil (for frying)
Instructions
- In a large bowl, combine crab meat, bell pepper, green onions, mayonnaise, Worcestershire sauce, and Cajun seasoning. Mix gently.
- Place about two tablespoons of filling in the center of each egg roll wrapper. Fold and roll tightly, sealing edges with water.
- Heat vegetable oil in a frying pan over medium heat until hot (about 350°F).
- Fry egg rolls seam-side down until golden brown on all sides (about 3-4 minutes per side).
- Remove from oil and drain on paper towels before serving with dipping sauce.
