- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ¼ cup cocoa powder
- 1 tsp espresso powder
- ½ cup milk (or dairy-free alternative)
- ⅓ cup vegetable oil (or melted butter)
- 2 large eggs (room temperature)
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with nonstick cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, cocoa powder, and espresso powder.
- In another bowl, mix milk, vegetable oil, and eggs until smooth. Pour into dry ingredients and stir until just combined.
- Gently fold in chocolate chips.
- Fill each muffin liner about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean or with a few crumbs.
- Allow to cool slightly before transferring to wire racks.
