Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with nonstick cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, cocoa powder, and espresso powder.
  3. In another bowl, mix milk, vegetable oil, and eggs until smooth. Pour into dry ingredients and stir until just combined.
  4. Gently fold in chocolate chips.
  5. Fill each muffin liner about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean or with a few crumbs.
