- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup brewed strong coffee (or espresso)
- 3 large eggs (room temperature)
- 2 tsp pure vanilla extract
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- Whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan.
- Bake the crust for about 10 minutes until lightly golden. Let cool completely.
- In a large bowl, blend softened cream cheese with sugar until smooth. Add coffee and vanilla extract; mix well.
- Gradually add eggs one at a time while mixing slowly to avoid overmixing.
- Pour the filling over the cooled crust and bake for 50-60 minutes or until slightly jiggly in the center. Turn off the oven and let it cool inside for an hour.
- Chill in the refrigerator for at least four hours or overnight before serving with whipped cream on top.
