Instructions
- Preheat your oven to 325°F (160°C). Grease a 9×9 inch baking pan.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into the bottom of the prepared pan.
- Beat softened cream cheese until smooth; add eggs one at a time, mixing well after each. Stir in coffee extract.
- Pour the cheesecake mixture over the crust and bake for 30-35 minutes or until slightly jiggly in the center.
- Cool completely, drizzle with warm caramel sauce, and cut into squares.
