- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract

- Cinnamon (optional)
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine rinsed rice, coconut milk, sugar, and salt over medium heat.
- Stir occasionally until the mixture reaches a gentle boil.
- Reduce heat to low and simmer uncovered for about 30 minutes, stirring frequently until thickened.
- Remove from heat and stir in vanilla extract; add cinnamon if desired.
- Serve warm or chill in the fridge for at least two hours.
