Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and coconut flakes.
- In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
- Stir in fresh lime juice, zest, and vanilla extract.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Scoop tablespoons of dough into balls and roll each in powdered sugar.
- Place on prepared baking sheets about 2 inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
