- 2 lbs Yukon Gold or red potatoes
- 1 cup mayonnaise
- 2 tbsp yellow mustard
- 1 cup chopped celery
- ½ cup finely diced sweet pickles
- ½ cup diced red onion
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender (10-15 minutes). Drain and let cool.
- In a bowl, mix mayonnaise and mustard until smooth.
- In a large bowl, combine cooled potatoes, celery, pickles, and onion. Gently fold in the dressing until well coated.
- Season with salt and pepper to taste.
- Chill for at least an hour before serving for best flavor.
