- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 8 oz cream cheese (full-fat, softened)
- 1 tsp ground cinnamon
- For Cinnamon Sugar Coating: 1/2 cup granulated sugar, 2 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt; gradually mix into wet ingredients until combined.
- In a separate bowl, beat cream cheese until smooth; mix in sugar and egg yolk until creamy.
- Scoop about two tablespoons of cookie dough; flatten slightly and place one teaspoon of cheesecake filling in the center. Enclose the filling with the dough.
- Roll each filled dough ball in the cinnamon-sugar mixture and place on prepared baking sheets.
- Bake for 12–15 minutes or until golden brown.
