  • For Cinnamon Sugar Coating: 1/2 cup granulated sugar, 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt; gradually mix into wet ingredients until combined.
  5. In a separate bowl, beat cream cheese until smooth; mix in sugar and egg yolk until creamy.
  6. Scoop about two tablespoons of cookie dough; flatten slightly and place one teaspoon of cheesecake filling in the center. Enclose the filling with the dough.
  7. Roll each filled dough ball in the cinnamon-sugar mixture and place on prepared baking sheets.
  8. Bake for 12–15 minutes or until golden brown.
