- 1 cup canned chickpeas (or soaked overnight)
- 1 medium onion, chopped
- 2 ripe tomatoes, diced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 2 medium potatoes, boiled and cubed
- 10 pre-made samosa wrappers (or homemade)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lemon
- 2 green chilies, finely chopped (optional)
- Oil for frying
Instructions
- Prepare the Chickpeas: If using dried chickpeas, soak overnight and cook until tender. For canned, rinse and set aside.
- Create the Filling Mixture: Sauté onions in a pan until translucent. Add garlic, ginger, tomatoes, and spices; cook until well combined.
- Mix in Potatoes and Chickpeas: Stir in boiled potatoes and chickpeas; let simmer for flavors to meld.
- Assemble Samosas: Fill each wrapper with a spoonful of filling, fold into triangles, sealing edges with water.
- Fry Until Golden Brown: Heat oil in a deep pan; fry samosas until golden on all sides. Drain on paper towels.
- Serve Warm: Enjoy with mint chutney or yogurt dip.
