Ingredients
- 7 oz bittersweet chocolate (70% cocoa)
- 1 cup heavy cream (cold)
- 1/3 cup granulated sugar (adjust to taste)
- 3 large eggs
Instructions
- Melt the chopped bittersweet chocolate in a heatproof bowl over a double boiler or microwave until smooth.
- In a separate bowl, whip the cold heavy cream until soft peaks form.
- Beat the eggs and sugar together in another bowl until pale and thickened.
- Fold the melted chocolate into the egg mixture until combined, then gently incorporate half of the whipped cream before adding the remaining cream.
- Spoon into serving dishes and refrigerate for at least two hours before serving.
