- 1 (3.9 oz) box instant chocolate pudding mix
- 1/4 cup cocoa powder
- 1 cup brown sugar, packed
- 1/2 cup chopped pecans
- 1/2 cup caramel sauce (for drizzling)
- 1 cup unsalted butter, softened
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and brown sugar until smooth. Add eggs one at a time, mixing well after each addition along with the vanilla extract.
- In another bowl, whisk together flour, cocoa powder, pudding mix, and baking soda.
- Gradually mix the dry ingredients into the wet ingredients until combined into a thick batter.
- Fold in chocolate chips and chopped pecans gently until evenly distributed.
- Using a cookie scoop or tablespoon, drop dough onto lined baking sheets about two inches apart.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Drizzle warm caramel sauce over cookies before serving.
