- 1 pound boneless, skinless chicken breasts, cut into strips
- 4 cloves fresh garlic, minced
- ¼ cup low-sodium soy sauce
- ½ cup coconut milk
- 2 tbsp brown sugar
- ½ cup creamy peanut butter
- 2 tbsp freshly squeezed lime juice
Instructions
- In a bowl, combine soy sauce, coconut milk, minced garlic, brown sugar, and lime juice to create the marinade.
- Add chicken strips to the marinade and refrigerate for at least 1 hour (or overnight).
- Preheat the grill or grill pan over medium-high heat. Thread marinated chicken onto skewers.
- Grill chicken skewers for 4-5 minutes per side until cooked through (165°F/74°C).
- While grilling, in a small saucepan over low heat, mix peanut butter with reserved marinade until smooth.
- Serve skewers drizzled with peanut sauce and extra sauce on the side.
