- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (seasoned or plain)
- 1 cup marinara sauce
- 1.5 cups shredded low-moisture mozzarella cheese
- 0.5 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Pound the chicken breasts to about half an inch thick for even cooking.
- Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan.
- Dredge each chicken breast in flour, dip in egg, then coat in breadcrumbs.
- Heat olive oil in a skillet over medium heat and cook the breaded chicken until golden brown on both sides (approximately 3 minutes each).
- Place the fried chicken in the baking dish, top with marinara sauce, sprinkle mozzarella over each piece, and bake for about 20 minutes until the cheese is bubbly.
