- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup seasoned breadcrumbs (or panko)
- 2 cups marinara sauce (store-bought or homemade)
- 1 cup shredded fresh mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup chopped fresh basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels.
- Set up three shallow bowls: one with flour seasoned with salt and pepper, another with beaten eggs, and the last with breadcrumbs. Dredge each chicken breast in flour, dip into eggs, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat. Fry the breaded chicken for about 4-5 minutes per side until golden brown.
- Transfer the chicken to a baking sheet lined with parchment paper. Spoon marinara sauce over each piece and top with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes until the cheese is bubbly and golden. Garnish with fresh basil before serving.
