Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Pound chicken breasts to about ½ inch thick for even cooking.
  3. Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs mixed with Parmesan.
  4. Dredge each chicken breast in flour, dip in egg, then coat in breadcrumbs.
