- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- ½ cup grated Parmesan cheese
- 1 cup shredded fresh mozzarella cheese
- 2 cups marinara sauce
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Pound chicken breasts to about ½ inch thick for even cooking.
- Set up a breading station: flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan in a third bowl.
- Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and fry chicken for about 4 minutes on each side until golden brown.
- Place fried chicken in the baking dish, cover with marinara sauce, and top with mozzarella cheese. Bake for about 20 minutes until cheese is bubbly.
