  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs

  • 1 cup shredded fresh mozzarella cheese
  • 2 cups marinara sauce
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Pound chicken breasts to about ½ inch thick for even cooking.
  3. Set up a breading station: flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan in a third bowl.
  4. Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and fry chicken for about 4 minutes on each side until golden brown.
  6. Place fried chicken in the baking dish, cover with marinara sauce, and top with mozzarella cheese. Bake for about 20 minutes until cheese is bubbly.
