- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups romaine lettuce (chopped)
- 1 cup freshly grated Parmesan cheese
- 1 cup Caesar dressing
- 1 cup croutons
- 2 tbsp Dijon mustard
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat grill or skillet to medium heat. Season chicken breasts with salt and pepper. Cook each side for about 6-7 minutes until internal temperature reaches 165°F (75°C). Allow to rest before slicing.
- While chicken rests, chop romaine lettuce into bite-sized pieces and place in a large bowl.
- In a small bowl, mix Caesar dressing with Dijon mustard and lemon juice until smooth.
- Slice the chicken and add to the bowl of lettuce. Top with croutons and Parmesan cheese.
- Drizzle dressing over the salad, tossing gently to coat all ingredients evenly.
- Serve on individual plates or one large platter, garnishing with extra Parmesan if desired.
