Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 cups fresh romaine lettuce, chopped
- 1 cup Caesar dressing
- 1 cup freshly grated Parmesan cheese
- 1 cup croutons
- 2 tbsp freshly squeezed lemon juice
Instructions
- 1. Prepare the Chicken: Preheat your grill or skillet over medium-high heat. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes per side until golden brown and cooked through. Let rest before slicing.
- 2. Chop Your Romaine: While the chicken cools, chop the romaine into bite-sized pieces and place in a large salad bowl.
- 3. Make It Saucy: In a small bowl, mix Caesar dressing with lemon juice for added zing.
- 4. Slice That Chicken: Thinly slice the rested chicken and add it to the romaine.
- 5. Toss It All Together: Drizzle with the dressing mixture and toss gently until well-coated. Sprinkle with Parmesan cheese and toss again.
- 6. Crouton Crunch Time: Top with croutons and serve immediately.
