- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 large head of romaine lettuce (about 10 oz)
- ½ cup Caesar dressing
- 1 cup homemade croutons
- ½ cup freshly grated Parmesan cheese
- Juice of 1 lemon (about 2 tbsp)
Instructions
- Preheat the grill or oven to medium-high heat (375°F). Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until fully cooked.
- While the chicken cooks, wash and chop the romaine lettuce into bite-sized pieces; place in a large bowl.
- For homemade croutons, cube stale bread and toss with olive oil, garlic powder, and Italian seasoning. Bake in the oven at 400°F for about 10 minutes until golden brown.
- Slice the cooked chicken after resting for a few minutes.
- Combine sliced chicken, croutons, and Parmesan cheese with the chopped romaine in the bowl. Drizzle generously with Caesar dressing and toss everything together gently.
- Serve immediately to maintain crouton crunchiness; drizzle with extra dressing if desired.
