- 1 lb boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 1 cup bell peppers (mixed red and yellow)
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 3 tbsp low-sodium soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
Instructions
- Cut chicken into bite-sized pieces and chop broccoli into florets. Slice bell peppers into strips.
- In a bowl, combine soy sauce and cornstarch. Add chicken pieces to coat and let marinate for about 15 minutes.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add marinated chicken in a single layer and cook until golden brown (about 5 minutes).
- Stir in garlic, ginger, broccoli florets, and bell pepper strips; stir-fry for an additional 5 minutes until vegetables are tender-crisp.
- Pour any remaining marinade over everything, stirring until well-coated and heated through (about 2 minutes). Serve immediately.
