Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix mashed potatoes with eggs and milk until smooth.
- Stir in cheese and green onions for added flavor.
- Season with salt and pepper, then gently fold in baking powder.
- Fill muffin cups three-quarters full with the mixture.
- Bake for 25-30 minutes or until golden brown on top.
