- 12 oz cheese tortellini
- 1 lb lean ground beef
- 1 cup enchilada sauce
- 2 cups shredded Mexican cheese blend
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, sauté chopped onion in oil until soft. Add ground beef, cooking until browned; stir in minced garlic.
- Season with cumin and chili powder. Pour in enchilada sauce and simmer for about 5 minutes.
- Fold cooked tortellini into the beef mixture until well coated.
- Sprinkle shredded cheese on top and cover until melted (about 5 minutes).
- Serve hot, garnished with cilantro if desired.
