  • 1 lb ground beef or turkey
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the tops off the bell peppers; remove seeds and membranes.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground meat and cook until browned.
  4. Stir in cooked rice, diced tomatoes, and Italian seasoning until well combined.
  5. Stuff each pepper generously with the filling and top with shredded cheese.
  6. Place peppers upright in a baking dish covered with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden brown.
