- 4 medium bell peppers (red, yellow, or green)
- 1 cup cooked rice (white or brown)
- 1 lb ground beef or turkey
- 1 cup shredded mozzarella cheese
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the tops off the bell peppers; remove seeds and membranes.
- In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground meat and cook until browned.
- Stir in cooked rice, diced tomatoes, and Italian seasoning until well combined.
- Stuff each pepper generously with the filling and top with shredded cheese.
- Place peppers upright in a baking dish covered with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden brown.
- Serve hot, garnished as desired.
