- 3–4 boneless, skinless chicken breasts (about 1 lb)

- 1 cup low-sodium chicken broth
- 1/2 cup whole milk

Instructions
- Preheat oven to 375°F (190°C). Cut chicken into bite-sized pieces.
- In a skillet over medium heat, add a splash of olive oil and sauté frozen vegetables for 5-7 minutes until heated through.
- Add chicken broth and milk, stirring to combine. Add diced chicken, salt, and pepper; cook until chicken is no longer pink (about 10 minutes).
- Prepare cheddar bay biscuit mix according to package instructions without overmixing.
- Transfer the creamy filling into an oven-safe dish, spoon biscuit dough on top.
- Bake for 25-30 minutes or until biscuits are golden brown.
