- 3 cups powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two round baking pans.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
- In another bowl, beat eggs and oil until blended, then stir in the grated carrots.
- Gradually combine the wet and dry ingredients until just mixed—do not overmix.
- Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool completely before frosting with the cream cheese mixture (cream cheese + powdered sugar).
