Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, and salt.
- In another bowl, cream softened butter with brown sugar and granulated sugar until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in shredded carrots and optional nuts.
- Drop tablespoons of dough onto prepared baking sheets, spacing them apart.
- Bake for 12-15 minutes until edges are golden and centers are slightly soft.
- Let cool on wire racks before enjoying.
