- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 2 tablespoons Cajun seasoning
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 cup diced bell peppers (red and green)
- 3 cloves fresh garlic (minced)
- 2 tablespoons olive oil
- 1 medium onion (diced)
Instructions
- Prep your ingredients: Chop chicken into bite-sized pieces, dice onion and bell peppers.
- Cook the pasta: In a large pot of salted boiling water, cook pasta until al dente according to package instructions. Drain and set aside.
- Sauté chicken & veggies: In a skillet over medium heat, add olive oil and chicken. Season with Cajun seasoning; cook until golden brown (5-7 minutes). Add onion and bell peppers; stir until softened.
- Add garlic & cream: Once veggies are tender, add minced garlic and cook for about 1 minute. Pour in heavy cream, scraping the pan's bottom for flavor.
- Toss everything together: Stir in cooked pasta and Parmesan cheese until well-coated. Simmer for another 2-3 minutes to meld flavors.
- Serve & enjoy: Plate the dish garnished with fresh herbs or extra cheese if desired.
