- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning (adjust to taste)
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Prep your ingredients by chopping chicken into bite-sized pieces.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and sprinkle with Cajun seasoning; cook until golden brown.
- Meanwhile, bring salted water to boil in a separate pot and cook pasta until al dente according to package instructions.
- Once chicken is cooked through, pour in heavy cream and simmer for about 5 minutes until slightly thickened.
- Drain pasta and toss it into the skillet with the sauce; stir in Parmesan cheese until melted and creamy.
- Garnish with fresh parsley and serve immediately.
