- 4 salmon fillets (6 oz each)
- 1/4 cup bourbon
- 2 ripe peaches, sliced
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix bourbon, brown sugar, Dijon mustard, salt, and pepper until well combined.
- Gently fold in sliced peaches into the marinade.
- Place salmon fillets skin-side down on a parchment-lined baking sheet. Drizzle with olive oil and pour the marinade over the top.
- Roast in the oven for 15-20 minutes until salmon flakes easily with a fork.
- Let rest for a few minutes before serving; pair with rice or salad.
