  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 cups fresh blackberries
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Gradually add sugar until fluffy.
  3. Mix in sour cream, vanilla, lemon juice, and eggs one at a time until fully incorporated.
  4. Gently fold in half of the blackberries.
  5. Pour filling over the crust and bake for 45-50 minutes or until slightly jiggly in the center.
