- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 cups fresh blackberries
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs, room temperature
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Beat softened cream cheese until smooth. Gradually add sugar until fluffy.
- Mix in sour cream, vanilla, lemon juice, and eggs one at a time until fully incorporated.
- Gently fold in half of the blackberries.
- Pour filling over the crust and bake for 45-50 minutes or until slightly jiggly in the center.
- Allow to cool at room temperature before refrigerating for at least four hours before serving.
