- 1 ½ cups granulated sugar
- 2 tsp baking powder
- 3 large eggs (room temperature)
- 1 cup buttermilk
- ½ cup heavy whipping cream (for frosting)
- 1 cup fresh or jarred cherries (pitted)
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, mix flour, cocoa powder, baking powder, and sugar until combined.
- In another bowl, whisk eggs and buttermilk together; then combine with dry ingredients without overmixing.
- Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
- Whip heavy cream in a chilled bowl until soft peaks form; gradually add sugar until stiff peaks appear.
- On a serving plate, layer one chocolate cake, half the whipped cream, and half the cherries; repeat with the second layer.
- Top with remaining whipped cream and chocolate shavings before serving.
