- 1 lb lean ground beef
- 8 oz fresh mushrooms, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tbsp all-purpose flour
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
- In the same skillet, sauté the mushrooms, onion, and garlic until tender (about 5 minutes).
- Sprinkle flour over the veggies and stir to coat. Gradually add the beef broth while stirring to avoid lumps.
- Stir in Dijon mustard and let simmer for about 5 minutes until thickened.
- Reduce heat to low and mix in sour cream until smooth and heated through.
- Serve over cooked egg noodles or rice and garnish with fresh parsley if desired.
