- 1 lb lean ground beef
- 6 large flour tortillas
- 2 cups red enchilada sauce
- 1 medium onion, diced
- 2 cups shredded cheddar cheese
- ¼ cup chopped cilantro (for garnish)
Instructions
- Gather ground beef, tortillas, onions, cheese, and sauce.
- In a skillet over medium heat, cook diced onions until translucent. Add ground beef and season lightly with salt; cook until browned.
- Spoon the beef mixture onto each tortilla and roll tightly.
- In a baking dish, pour half of the enchilada sauce. Place rolled tortillas seam-side down and cover with remaining sauce and shredded cheese.
- Preheat oven to 375°F (190°C) and bake uncovered for 20-25 minutes until bubbly and golden brown.
