- 1 lb lean ground beef
- 8 corn tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup sour cream (for topping)
- sliced jalapeños (optional)
- chopped fresh cilantro (optional)
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground beef for 6-8 minutes until fully cooked. Drain excess fat.
- Mix half of the enchilada sauce into the beef along with desired spices; simmer for 5 minutes.
- Spoon beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with more cheese.
- Bake for 20-25 minutes until bubbly and golden brown. Serve with sour cream and optional toppings.
