- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- Bell peppers and onions (optional, for skewering)
Instructions
- Cut chicken breasts into bite-sized cubes.
- In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, pepper, honey, and soy sauce. Add chicken cubes and marinate in the refrigerator for at least 1 hour.
- If using wooden skewers, soak them in water for 30 minutes. Preheat the grill to medium-high heat.
- Thread marinated chicken onto skewers, alternating with bell peppers and onions if desired.
- Grill skewers for 10-12 minutes, turning occasionally until golden brown and cooked through (internal temperature should reach 165°F).
- Serve warm with lemon wedges on the side.
