- 1/4 cup low-sodium soy sauce
- 2 tbsp chili paste (adjust for spice preference)
- 1/2 cup creamy peanut butter
- 2 tbsp sugar
- 2 tbsp freshly squeezed lime juice
- Sesame seeds (optional, for garnish)
Instructions
- Cut the chicken breasts into bite-sized pieces.
- In a bowl, mix the soy sauce, minced garlic, grated ginger, and chili paste. Toss the chicken until evenly coated and marinate for at least 30 minutes.
- In another bowl, whisk together peanut butter, lime juice, sugar, and a splash of water until smooth.
- Heat oil in a large skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes until golden brown and cooked through.
- Pour the peanut sauce over the chicken and simmer for another 2-3 minutes until heated through.
- Serve warm over rice or in lettuce wraps, garnished with sesame seeds if desired.
