- 3–4 ripe bananas (about 1½ cups mashed)
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth but still slightly chunky.
- Mix in the melted butter, then add both sugars until well combined.
- Add eggs one at a time, whisking thoroughly after each addition.
- In another bowl, whisk together flour, baking soda, and salt. Gradually fold this dry mix into the banana mixture until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes or until a toothpick comes out clean.
- Allow cooling for about 10 minutes in the pan before transferring to a wire rack.
