- 4 (6 oz) salmon fillets
- 1 cup fresh pineapple chunks
- 2 tbsp honey
- 2 tbsp freshly squeezed lime juice
- 3 cloves minced garlic
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, mix honey, lime juice, minced garlic, salt, and pepper until well combined.
- Place the salmon fillets skin-side down in the baking dish and pour half of the marinade over them.
- Scatter the pineapple chunks over the salmon and drizzle with the remaining marinade.
- Bake for 15-20 minutes until the salmon flakes easily with a fork.
- Allow resting for a few minutes before serving; drizzle any leftover sauce on top.
